The dough is soft and silky without giving way to mush, the pork-and-leek filling is virtually greaseless, and the flavor has a distinctively sweet and and slightly tangy note to it that adds just the right amount of depth to what is already a perfectly made cheap eats staple. Add a splash of Sriracha and/or vinegar, and you have arrived.
