Pressed sandwiches are a lunchtime staple at most Cuban bakeries. The "croquetas preparadas" begins with a butter-up slab of Cuban bread. Minced ham croquettes go in, followed by deli slices of ham and cheese. Mustard and pickles are the condiments of choice for those who want a tart kick, but I wasn't up to the task this time. The sandwich is then flattened as it's warmed on a press. The end result is a hand-held treat that is crisp on the outside but gooey and chewy on the inside.
