LA is chock full of unique street dining experiences and one of them can be had on Echo Park Blvd around the corner from Sunset Blvd. At this location is a Oaxacan Quesadilla Street Cart where you can order up a blue corn quesadilla with a choice of 6 different fillings (or you can even mix 2 or more). Choices include beans, huitalacoche, chicarrones, chicken, squash blossoms and chorizo and potato. You can have these quesadillas on their own or top them with a mixture of onions, cilantro and nopales, a spicy red or mild green salsa and/or a sprinkling of cotija cheese. You'll generally catch her during the weekends between 12:00 pm and 3 pm and believe me, those quesadillas are worth driving for.
