A trip to Holy Taco in the East Atlanta Village can include authentic bites like a tongue taco or pork belly torta. We prefer the whole roasted corn, arriving with stalk-intact, and slathered in queso fresco and spicy mayo. The chunks of soft, Mexican cheese and bite of the spicy aioli add a wonderful texture and flavor to this smoked joker. We do, however, recommend cutting the corn off the cob and giving it a thorough mixing rather than gnawing-it, kid style. This provides a more consistent cheese-to-corn ratio, and also guarantees you won’t be picking corn out of your teeth for the rest of the meal.
