Growing up in a Vietnamese household, banh beo was my Mom’s favorite and super inexpensive way to feed what I lovingly coined the “Asian Invasion” that came to our house for the holidays. These starch-a-iffic rice patties are generously heaped on a plate and topped with dried shrimp, fried shallots, mung beans, scallions and a dash of cilantro.
