How cool. This is the first I’ve heard of a restaurant that serves chicken skin cracklings.

I discovered chicken Cracklings about 30 years ago when I was raising my 4 children on food stamps only. Our only meat for the month was 4 whole chickens. I decided to see how many meals I could make with these.

I had no doubts that chicken skins could taste this good the first time I ordered them at Feast, the Houston mecca of nose-to-tail cuisine. But I didn't expect them to be so paper-thin, delightfully crispy, and baked to perfection. Move over pork rinds.
