BuonItalia is the best Italian market in New York, but I don’t go there to buy spaghetti and I don’t go to buy burrata. I go to eat this focaccia, a garlicky, crisp-bottomed masterpiece with explosions of tomato flavor and a crust as airy as a cloud. It doesn’t have a trace of cheese and doesn’t need any, either.
